No bake coconut and muesli balls

Recently I made these coconut balls for my kids’ lunch boxes and they were a hit! I had fallen into the trap of buying store-bought apricot and coconut balls, which are loaded with sugar and expensive. So, I adapted a recipe I found online and created my own version of this classic. These are super easy to make, require no baking, and the kids can help make them. If the muesli you are using already contains diced fruit, there’s really no need to add any extra. I use the Lowan muesli brand, which has sultanas and dried apricots already so I didn’t bother adding any more. Instead, I roughly chopped some pitted prunes to add sweetness (thereby reducing the need for much honey) and to keep things moving along…


Try these babies and adapt to taste. You can use honey, maple syrup or even rice malt syrup. The messy part of rolling and covering in coconut is heaps of fun for the kids. Keep them in an airtight container and watch then disappear.

Ingredients:
• 2 cups toasted muesli
• 1 cup dried apricots (or other fruit if the muesli does not already contain mixed fruit)
• 1/2 cup chopped pitted prunes
• 60g butter, melted
• A few squeezes of honey
• 1/4 cup desiccated coconut (extra for rolling)

Method:
Place muesli, apricots (or dates, dried pear, raisins) chopped prunes, honey and warm, melted butter in a food processor. Process for 2 to 3 minutes or until well combined.


Place desiccated coconut in a shallow dish. Have your Littlefinders roll the muesli mixture into balls, approximately 3cm in diameter and coat balls in coconut. Then place muesli balls onto a tray and refrigerate for approximately 20 mins to make them nice and firm and chewy. YUM!!!

This recipe makes approximately 20-24 balls. You can easily double the recipe and freeze half the quantity. These muesli balls are perfect for an after school snack or lunchbox treat. And they’re not just for the kids. I can’t resist them as a mid afternoon snack, and they’re a lot healthier than my usual Tim Tam 3pm pick up!
